Cumquats – delicious dried by the sun

The sun is doing its work again in my solar dehydrator. A friend gave me some cumquats, I sliced them thinly and was delighted to find there were not many pips to remove. They dried to crisps in yesterday’s sun and are delicious to nibble and have as a garnish on a biscuit with your choice of cheese.
Ray built the solar dehydrator from the design at www.jrwhipple.com/sr It is so successful he has built a 4 tier one for drying figs, plums, peaches, apricots, apple, tomatoes and basil as they ripen in the garden over summer.
