I was talking to someone about a pending public event and they had the problem of supplying an inexpensive ‘fast’ food that was healthy, tasty, more sustainable than the sausage sizzle but quick and easy to serve up. I of course got right on the project … I love food and quite enjoy a bit of a challenge! My first thought was a vegetarian sausage made from some local produce and BBQ’d on site. Not a new concept .. but alas the only casings I could find are animal cellulose, so it is back to the drawing board unless someone can point me in the direction of a vegetable based sausage casing! They do exist but not in Australia as far as my Google research could determine.
On that note I will now try to perfect a vege burger that does not crumble in the cooking.
